How a small kitchen obsession turned into the bakery down the street.
From a Home Kitchen to Main Street
Sunrise Bakery began, quite literally, at the kitchen table. Our founder, Maria Esposito, started baking sourdough as a way to unwind after long shifts as a line cook — feeding a wild yeast starter she named "Gus" and giving away loaves to anyone who'd take one.
What started as neighbours knocking on her door for bread turned into weekend farmers' market stalls, then a tiny rented kitchen, and finally — five years ago — the doors of Sunrise Bakery opened on Main Street for good.
Real Bread Deserves Real Time
We believe good bread can't be rushed. Every sourdough loaf we bake is fermented slowly — often 18 to 24 hours — to develop flavour, improve digestibility, and create that deep, crackling crust we've become known for.
Our mission is simple: bring honest, handcrafted bread and pastry to our neighbours, support the local farmers and mills we buy from, and make our little corner of Main Street feel like somewhere you belong.
Our Baking Philosophy
Three principles guide everything that comes out of our ovens.
Naturally Leavened
We use a wild sourdough culture instead of commercial yeast, for deeper flavour and better digestibility. No shortcuts, no additives.
Locally Sourced
Our flour comes from a family-run mill two hours away, and our fruit and dairy from farmers at our weekend market.
Handcrafted, Small-Batch
Every loaf is hand-shaped and scored. We bake in small batches throughout the day so what you buy is always fresh.

Started it all with one sourdough starter and a lot of stubbornness. Still shapes the first batch of loaves every morning.
James Bell
Trained in traditional French bread-making. Keeps our starter healthy and our ovens running from 4am.
Aline Laurent
Behind every croissant, danish and seasonal treat in the case. Believes butter is a personality trait.
